Equipment

  • Air Fryer
  • Silicone Cupcake Molds or Ramekins
  • Mixing Bowls

Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 3 tablespoons butter melted

Filling

  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream

Optional Toppings

  • fresh berries
  • caramel drizzle
  • whipped cream

Instructions

  • Mix graham cracker crumbs and melted butter until it resembles wet sand. Press about a tablespoon into the bottom of each silicone mold or ramekin. Air fry at 325°F (160°C) for 3 minutes to set.
  • In a bowl, beat softened cream cheese and sugar until smooth. Add egg, vanilla extract, and sour cream. Mix until just combined, not overmixed.
  • Spoon filling over the crusts. Lightly tap molds to remove air bubbles.
  • Air fry at 300°F (150°C) for 12-14 minutes until edges are set and centers are slightly wobbly.
  • Cool to room temperature, then refrigerate for at least 2 hours before serving. Add toppings as desired.

Notes

Use full-fat cream cheese for the creamiest texture. Let ingredients come to room temperature before mixing to avoid lumps.
