Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Wet Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

Mix-ins

  • 1 1/2 cups grated carrots about 3 medium carrots
  • 1/2 cup crushed pineapple drained
  • 1/3 cup chopped walnuts or pecans optional

Instructions
 

  • In a large bowl, whisk together the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, beat the eggs, oil, and vanilla extract together.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined. Fold in grated carrots, crushed pineapple, and nuts if using.
  • Grease and line a 6-inch cake pan. Pour the batter in.
  • Air fry at 320°F for 30-35 minutes, until a toothpick inserted comes out clean. Cool completely before frosting.

Notes

Use fresh grated carrots for the best flavor. Don't overmix to keep the cake fluffy. Feel free to add raisins or swap nuts as desired.
